One of my life/food mantras is “everything is better with sauce”. And while I’ve never actually said that out loud to anyone before, I’ve definitely thought it a multitude of times. I extra mean it about this Chipotle Lime Sauce.
One of my absolute favorite foods are (is?) tacos, or anything taco related. And nothing elevates a taco like a good sauce. This lime chipotle sauce is just a little bit out of the ordinary, but incredibly simple to whip up and absolutely delicious. Try it the next time you make tacos or taco salad and you won’t be disappointed!
This sauce takes about 5 minutes to make and doesn’t require any cooking. It stays good for about 4 days in the fridge.

Substitutions and Alterations
You can swap plain Greek yogurt for the sour cream.
You could make the recipe with all sour cream if you don’t like mayonnaise.
If you don’t want to buy regular chipotle in adobo peppers, you could use a pre-ground spice. Stores are starting to sell chipotle chili powder pretty much everywhere.

PRO TIP: Always start with less peppers than you think you’ll need and taste and adjust as you go. You can always add more, but you can’t take it away once it’s in there.

Tips and Tricks
- You can make this in a food processor for a completely smooth dip, but I prefer not to have to drag my food processor out, so instead I make a chipotle paste. To do that, you’ll take your chipotle pepper out of the can, and chop it up, then sprinkle a pinch of salt over it, and taking the flat side of your knife, you sort of mush it into a paste.
- Hold the non-sharp side of your knife in both hands and use the sharp side to press and scrape the peppers and salt together. Using the knife, bring the peppers back into one pile and repeat the process until you have a relatively even and smooth paste. Doing it this way results in a “lumpier” sauce, but it means less dishes, which is always fine with me.
- Chipotle peppers in adobo: this recipe only calls for 1-2 peppers (depending on how spicy you like things) but chipotles in adobo come in a can with generally about 5-6 peppers. Pour any leftover peppers into a glass Tupperware dish (plastic will stain) and the peppers will keep for about a month.
- The sauce thickens in the fridge but can be thinned out with a little bit of water.

- Thin it out and use it as a salad dressing.
- Marinate chicken or shrimp.
- Use it as a dip for chips or veggies.

Ingredients
- ½ cup mayonnaise

- ½ - 1 tablespoon fresh lime juice
- 1-2 chipotle in adobe peppers
- salt and pepper
