    Raw Carrot Salad is a healthy and delicious no-cook summer side dish!

    When I was a kid, my mom and I went to visit my grandmother who served cooked carrots for dinner. I absolutely loved them and asked my mom why we never had them. Turns out she hates them, and had been forced to eat them her whole childhood, and she had vowed to never make them as an adult.

    Well, I'm the adult now, and I still love cooked carrots. I make them whenever I can in whatever ways I can think of.

    But they've been pushed to the side a bit by this raw carrot salad - it's as easy as peeling a carrot and it's a great option for when I don't want to turn on the oven.O

    Tips and Tricks

    • You can make the dressing a few days ahead and store it in the fridge in an air tight container.
    • The carrots will continue to soften as they sit in the dressing, so it's best to eat them within 20-30 minutes of dressing the salad.
    • You could also shred the carrots if you prefer to eat them that way.

    FAQ's

    • Does this make good leftovers? It doesn't. The carrots get softer and softer the longer they sit in the dressing. I would recommend making the dressing separately and then ribboning a carrot when the mood strikes.
    • How long does the dressing last? The dressing should last for about a week in the fridge in an air tight container.
    • Can I make this vegan? Absolutely! Swap the honey for agave and the soy sauce for coconut aminos and you're good to go!

    Raw Carrot Salad

    Ingredients
      

    Dressing

    • 3 tablespoon lime juice
    • 2 tablespoon soy sauce
    • 1 clove garlic crushed or minced fine
    • 1 ½ tablespoon honey
    • ½ teaspoon sesame oil
    • 1 teaspoon rice wine vinegar

    Salad

    • 3 large carrots or 4 small carrots
    • 1 scallion
    • 1 teaspoon sesame seeds

    Instructions
     

    Dressing

    • Add all dressing ingredients to a small jar with a lid, and shake the dressing to combine.

    Salad

    • Using a vegetable peeler, peel the skin off the carrots and then continue to peel the carrots into thin strips into a bowl. Peel until you reach the core of the carrots. Depending on the size of your carrots, you'll have differently sized carrot ribbons.
    • Add the dressing to the carrots, and toss to combine. Let the salad sit for about 5 minutes to let the pickle a bit in the dressing.
    • Top with slices of scallion and sesame seeds.

    Notes

    If you'd prefer, you can grate the carrots on a box grater instead of ribboning them with a peeler.
