    Spicy Lemon Garlic Buttered Noodles

    These Spicy Lemon Garlic Buttered Noodles are maybe the most perfect quick and easy weeknight meal. 

    April 19th is apparently National Garlic Day, and I thought what better way to celebrate that than by sharing my Lemon Garlic Buttered Noodle recipe! 

    Now, my main goal in life is to eat enough garlic that I just radiate it from my pores (so sorry to my friends and family) and this recipe always gets me one step closer to that goal.  Thank you for letting me live my best garlic centered life here.

    This recipe for Spicy Lemon Garlic Buttered Noodles truly comes together in under 15 minutes and it’s so good and so easy.  Add some garlic bread and a simple salad, and it’s the epitome of what a weeknight meal should be.

    Unfortunately, this recipe is no good for my low FODMAP friends, but you could omit the garlic and just do lemon buttered noodles and it would still be absolutely delicious.

    Spicy Lemon Garlic Buttered Noodles

    Garlic:

    For those who can eat garlic, did you know how incredibly good it is for you?  Part of the onion family, garlic contains TONS of vitamins and minerals while being low calorie and high fiber.  It improves immune functions in your body and has been used for centuries as a medicine.  It contains antioxidants that help fight Alzheimer’s and dementia.  It also contains prebiotics, which feed good gut bacteria.  I don’t know if it’s on the “superfoods” list, but it should be.

    To make Lemon Garlic Buttered Noodles

    Start by boiling your pasta to package directions and slice your garlic while the pasta cooks.  You can use a mandolin if you want (which is what I normally do) or if you have the knife skills, you can slice them by hand.

    When the pasta has about 4 minutes to go, melt your butter in a skillet over medium heat (and don’t be afraid to go heavy on the butter – you’re eating buttered noodles here – you should be able to taste the butter) and add the garlic and red pepper flakes and let it cook for a few minutes. 

    Reserve a ¼ cup of the pasta cooking water, and drain the pasta.  Squeeze the juice of a half a lemon (or more if that’s your thing) into the butter and garlic and then add the pasta into the skillet and toss to coat with the butter.  Add a few tablespoons of pasta water if it seems dry.

    Serve with parmesan cheese and lemon slices.

    Spicy Lemon Garlic Buttered Noodles

    These Spicy Lemon Garlic Buttered Noodles may be the most perfect quick and easy weeknight meal.

    Ingredients

    Spicy Lemon Garlic Buttered Noodles
    • 8 ounces pasta of your choice
    • 2 ½ tablespoons unsalted butter
    • 3 cloves garlic, thinly sliced
    • ¼ teaspoon crushed red pepper (or to taste)
    • 1 lemon, halved
    • salt and pepper
    • parmesan cheese

    Instructions

    To Make Spicy Lemon Garlic Buttered Noodles
    1. Boil a large pot of water and cook pasta according to package directions.
    2. Slice the garlic thinly using either a knife or a mandoline.
    3. When the pasta has about 5 minutes to go, melt the butter in a large skillet, and once the butter is melted, add the sliced garlic and let it cook for a 2-4 minutes.  It wont brown, but it should get soft.  
    4. Reserve a ¼ cup of the pasta cooking water, and drain the pasta.
    5. Squeeze the juice of half a lemon into the pan with the butter and garlic (save the other half for serving) and then add the cooked pasta to the pot and toss to coat in the sauce.  If it's too dry, add some of the pasta water a tablespoon at a time.
    6. Season to taste with salt and pepper.
    7. Plate and serve with lemon slices and parmesan cheese.
