Add all dressing ingredients to a small jar with a lid, and shake the dressing to combine.
Using a vegetable peeler, peel the skin off the carrots and then continue to peel the carrots into thin strips into a bowl. Peel until you reach the core of the carrots. Depending on the size of your carrots, you'll have differently sized carrot ribbons.
Add the dressing to the carrots, and toss to combine. Let the salad sit for about 5 minutes to let the pickle a bit in the dressing.
Top with slices of scallion and sesame seeds.
If you'd prefer, you can grate the carrots on a box grater instead of ribboning them with a peeler.
